The Appraisal Samples offered here are a sensory prelude before formal Allocation. This is not merely a tasting, but a quiet conversation about flavor — meant to identify those partners who understand patience, extraction, and the guardianship of terroir. Part Two: Three-Tier Appraisal Guide

01. Single Origin Appraisal
Specification: 50g Estate Micro-Lot Sample

A raw record of terroir. The 50g sample acts as a microscope for the sensory appraiser, capturing the unaltered imprint of a single harvest. Small-batch roasted to restore the subtle marks of altitude, sunlight, and soil. Not a product — the land's autobiography.

 

02. Espresso Blend Appraisal
Specification: 200g Family Cellar Blend Sample

The family's final verdict on flavor balance. The 200g quantity allows commercial estates to perform multi-dimensional extraction calibration. We deconstruct and reassemble distinct origins into a layered profile of high consistency. Not merely a blend — our proud technical benchmark for estate-level stability.

 

03. Sensory Parameter Appraisal
Specification: Handwritten Parameters by the Family Proprietor (included with allocated batches)

Not a bag of coffee, but extraction coordinates. Each cellar batch is accompanied by handwritten parameters from the family proprietor — temperature, ratio, time. Never published online. This is not a manual — it is the master's signature.

On Extraction & Vessel Recommendations

The Focus family is currently developing a dedicated set of sensory appraisal instruments in a private laboratory. Before their formal release, we require all partners to use the highest standard of purified water and physically stable appraisal cups. Exceptional flavor never needs ornate embellishment — but it absolutely demands a reverence for physical temperature. Please adhere strictly to the accompanying Sensory Parameter Card — it is the sole frequency that unlocks the soul of each vintage.
